QUICK-AS-A-WINK CINNAMON ROLLS
6 T. Yeast
2 1/2 c. warm water
1 c. Oil
4 beaten eggs
2/3 c. Sugar
10 1/2 c. flour, sifted

3 tsp. salt
1/2 c. Butter, melted
1 c. sugar
3 T. cinnamon
1 c. Raisins and or nuts, opt. ( we didn't put any of that in there)

In a large bowl mix 2/3 cup sugar, yeast, oil, and water until dissolved. Cover and let stand in warm place 15 minutes. Blend eggs into yeast mixture. Add salt to flour and gradually add to yeast to make soft dough. Knead 5 minutes on lightly floured surface. Roll into rectangular shape about 1/4 inch. thick. Brush dough with melted butter. Combine cinnamon and 1 cup of sugar, sprinkle over dough and rol it up, cut 1 inch. slices with string or knife( dental floss works really well ). Place on two greased rectangular pans. ( Spread some extra melted butter or oil on bottom of sheat) Let rest 10 minutes. Bake at 425 degrees for 10-15 min. or until golden brown. Frost. Makes 2-3 dozen ( it made a big 3 dozen).

CREAM CHEESE FROSTING
8 oz. pkg, cream cheese, softened
1/2 butter, softened
1 tsp. vanilla
3 c. powered sugar
1 tbsp. milk, just enough to fluff
Combine all ingredients and mix until smooth. Spread on very warm rolls.
There really yummy!!!
